Welcome to an exploration into thiols - highly aromatic compounds that can generate intensely fruity aromas. This series revolves around the addition of Phantasm powder (derived from NZ Sauvin Blanc grape skins), which enhances and helps to unlock specific aroma compounds when used in conjunction with a special genetically modified yeast & biotransformation processes. We went with a base of pilsner malt, red wheat, and malted oats to set a soft base and let the hop thiols shine.
A mash hop with locally grown Cascade, massive cool pool charge of Galaxy, Zappa, and Nelson Sauvin hops, and an active fermentation addition of Galaxy, all help to create precursors that are converted into fruity aromas by the special Thiolized yeast used. Heavy dry hop additions of Zappa, Galaxy, and Nelson Sauvin hops are then added to the mix for even more aroma.
All of these key steps help to unlock pungent flavors of passionfruit, grapefruit, and ripe guava, and each plays a specific role that will be highlighted in future releases.
